Perfect Double-Lid Claypot Rice Recipe

  • Measure the Ingredients: Combine rice and water in a strict 1:1 ratio inside the claypot. [1]
  • Align the Lids: Position the inner and outer lids so their steam holes sit at a 90-degree angle relative to each other to trap heat properly. [1]
  • Start Cooking: Turn your stove to medium heat. [1]
  • Watch for Steam: Keep a close eye on the pot and turn off the flame completely as soon as steam begins blowing out of the vent holes (usually takes 3 to 5 minutes). [1]
  • Let it Rest: Keep the lids tightly sealed and leave the pot untouched on the stove for 20 minutes to finish steaming. [1, 2]
  • Fluff and Serve: Remove the lids carefully, fluff the fully cooked rice, and serve.

 

Donabe Perfection in One Pot

In Japanese, “donabe” means clay pot. These clay pots have thick clay walls that are porous, allowing heat to build up gradually and making it ideal in retaining heat. Because of this, rice steamed in the donabe does not need to be constantly monitored, so everyone can make sweet and fluffy rice!

This clay pot is special because it is from Iga, an ancient 1200-year-old Ninja village near southern Kyoto. The clay is taken from the bottom of a late called Biwa lake.

It is the Japan’s best claypot for making rice. It’s a piece of history, culture and art of wisdom.

Care, Usage & Aging
  • Heat Sources: Designed strictly for gas stovetops and ovens (up to 500°F / 250°C) (p. 2). Do not use on induction hobs, electric cooktops, or in microwaves (p. 2).
  • Maintenance: Hand wash only (p. 2). The pot must be seasoned before its first use (p. 2).
  • Aging Character: Over time, thin vein-like lines (kannyu) will naturally develop on the glaze (p. 4). The bottom will also develop dark spots (p. 4). Both are normal cosmetic changes that do not hurt performance (p. 4). If it blackens too fast, reduce your cooking temperature (p. 4).
